A simple recipe to cook 3 ways! Keto, freezable, and yummy! Heads up I think that mild sauce at Taco Bell is spicy... and this was not spicy. It has great flavors. If you are worried at all about spicyness though, remove the green chilies, and for the Salsa Verde make sure you get MILD and at about 10% - 20 % of water. Ingredients 2 - 3 lbs of Boneless chicken 24 ounces of Chicken Broth 28 ounce Green Enchilada Sauce 4 ounces (or more depending on your preference) Salsa Verde (Green Salsa) 1 cup Heavy Whipping Cream 3 cups Monterey Jack Cheese 4 ounces of cream cheese (room temperature) - up to 8 ounces if you want it creamier 4 ounces of diced green chilis Salt / Pepper to taste Optional - Sour Cream, Cilantro, or Avocado - whatever you put on your enchiladas :) Slow Cooker - 6 - 8 Hours - 6 Quarts Add chicken, chicken broth, and green enchilada sauce to your slow cooker. October is here which means... it’s my birthday month. I want to stay keto strong and in order to do that I will need a keto approved cake that doesn’t taste nasty and secondly is not filled with a hundred crazy steps. Not my style! So after testing a few combinations, I am here to share the best of the best! 100% Vegan Keto Fudge

Keto and Vegan have come together to make this delicious and EASY treat!! There really isn't an easier recipe that mixing something in a bowl and placing it in the fridge! This recipe has a coconut flavor, I will give some tips at the bottom to alter that. Here is what you will need: 3 Tablespoons Sweetener - I used Swerve 3/4 cup Unsweetened Cocoa Powder 1/3 cup Unsweetened Coconut Milk 2 teaspoon Vanilla Extract 3/4 melted Coconut Oil 1/3 cup of Lily's Chocolate Chips. Mix all of the ingredients, except the chocolate chips in a bowl. In a microwave safe bowl, melt the chocolate chips, in about 20 second increments until melted. Combine the chocolate chips with the rest of the ingredients.  Pour into your molds, and place in the fridge for at least 3 hours. That's really it! For some variation you can use extracts like raspberry, or strawberry! I recommend 1/2 teaspoon.

Fathead Dough Pastries!

Ready for a pastry that you will love? This recipe will have 3 variations, which I hope will also inspire you to create your own combination. We are first going to make a basic fat head dough, and create a filling! The top left is my peach / cream cheese pastry, I love peach and have been missing the flavor of it. The top right, which is hands down the best of the 3 is strawberry / cream cheese! I could eat this every meal of every day! If you have limited time in cooking, or don't have too much experience in cooking but don't mind eating a meal multiple times  then you are a Busy Bee! Homemade Keto Crisps - Regular & Hot

When you are on Keto, we need to great swaps so that we can keep on track. I loooove chips and dip, or chips and salsa, or well just chips. But chips will never fit into my macros, or be Keto compliant. So i tried some brands at the store, and I found that the cheese flavor was too strong. They were crispy though which is perfect for that crunch you need. I found a way to make them not so strong, and it could probably save some "dough" (keto joke). Let's get to the recipe!!
