The Best Keto Cookie Swap!

I am the cookie monster! I love cookies, so of course we need an amazing swap. After trial and error I created the best recipe for Keto Cookies!!




Ingredients
·       1 ½ cup of Almond Flour
·       ½ cup Melted Butter – I used Kerrygold Butter
·       ¾ cup Sweetener of your Choice! I used Swerve
·       1 cup Chocolate Chips
o   Or two ½ cup portions of Chocolate Chips
·       1 teaspoon Vanilla Extract
·       1 Large Egg
·       ½ teaspoon Baking Powder - if you are sensitive to the taste of Baking Powder use no less than ¼ a teaspoon)
·       ½ teaspoon Xanthan Gum – I 100% recommend investing in xanthan gum this will improve your cookies and make it feel like a true swap!
·       Pinch of salt

Instructions
1.       Preheat your over to 350 F.
2.       In a bowl mix the butter, sweetener, vanilla, and egg. The mixture will start to thicken.
3.       Add the baking powder, salt, almond flour, and xanthan gum.

4.       A dough will begin to form. Add half of the chocolate chips and mix into the dough.
a.       Alternatively, you could mix all of the chocolate chips in the dough, but my preference is to have some chips on the top of the cookie.

5.       The goal is to make about 12 cookies – grab a small amount of the dough and roll it into a ball and place on parchment paper / a baking sheet. Do not try to flatten the dough, leave them in balls.
6.       With the remainder of the chocolate chips, place them on the top of the cookie balls, unless you used them all in the dough already!

7.       Bake for 13 – 16 minutes – or until they are to your liking.
8.       If you can resist… allow them to cool.
